I wanted to share a soup recipe that I made yesterday. I was trying to clean out some things I had like potatoes and frozen beans. I thought soup would be perfect! It turned out really good so I thought I would pass along!
Vegetable Beef Soup
1lb ground beef
1 onion (chopped)
6 oz tomato paste
14.5 oz Stewed tomatoes
8 oz tomato sauce
2 cups chicken broth
1/2 cup water
1/2 beef broth
1/2 tsp salt
1/2 tsp pepper
1/2 tsp sugar
3/4 tsp wet garlic
4 potatoes (peeled and diced)
14.5 can of green beans
1 cup frozen corn
1 cup frozen Lima beans
1 cup frozen black eyed peas
1. Brown ground beef with chopped onion. Drain if needed.
2. Add everything else!
3. Bring to a boil and then simmer for 1hr, stirring occasionally, or until you eat! {Mine simmered for about 2 hours}
Then make a grilled cheese sandwich to go along with it!
It seems like a lot of ingredients but it's things that you mostly have on hand. If you don't have the kind of beans that I used you can also substitute it for other beans, or whatever else you have that you like in soup!
Jared said it needed more salt and pepper so just go with what you like on that! I thought it was perfect!
